 Romaine, Mango and Jicama Salad


Romaine-Mango-and-Jicama-Salad


This health-friendly salad is packed with vitamin A and has lots of fiber


8 cups of Romaine lettuce (about one head) or mixed greens

½ cup of Red onion (½ onion) finely sliced

1 Mango ripe but firm, peeled and cut into ¾ inch cubes

½ cup Jicama cut into ¼ x 2” strips

1 Avocado peeled and sliced

1½ tablespoons Cider vinegar

1 Garlic Clove minced

¼ cup Fresh cilantro cut and discard bottom 2 inches of stems and chopped

1 teaspoon honey

¼ teaspoon Salt according to taste

¼ teaspoon Ground black pepper according to taste

¼ cup Olive oil


What You Will Need

Cutting flat board

Sharp knife to chop or slice

Strainer

Large bowl

Small container

Small whisk or fork

Tongs


Directions

Wash, strain and cut/tear lettuce into the small and fine bite-size pieces.

In a large bowl - add lettuce, onion, mango and jícama.


Prepare to dress -

 A)  In a small container: mix cider vinegar, garlic, cilantro, honey, salt and pepper altogether with a small whisk, fork or anything you are comfortable with.

 B) Add olive oil slowly, while stirring to blend nicely well.

Toss salad lightly with dressing and adjust seasoning if it is required.

Garnish with one of my favorite avocado slices.

Serve.


Tips

Try this recipe with one of our favorite dressing

¼ c  vinaigrette dressing

1½ Tablespoon lime juice

1 teaspoon honey
